In celebration of my snow day I decided to make Spinach Sausage, & Tortellini Soup. Yummy, easy, and deeeelicious. It’s a hearty soup that is also healthy.

Ingredients:
-1 small white onion, or half a large one, chopped.
-fresh spinach (5 oz)
-2 cloves garlic, cut very small
-4 garlic chicken sausage links (12 oz package), diced
-1 48oz can chicken broth
-1 10 oz package of fresh tortellini
-salt and pepper
-Parmesan cheese
-olive oil

Cut sausages into really small pieces. I slice them into fours, and then dice them.

Throw them into a pan with a little bit of olive oil to maximize their flavor. Heat on low so as not to burn them.

Chop the garlic and onions, and throw them in with the sausages for a few minutes. Cook until onions are translucent.

Heat the chicken broth while sausage mix is cooking. Throw in spinach and let it shrink down in broth. Salt and pepper broth to taste.

Add sausage/onion/garlic mix. Because I use chicken sausage-they don’t get as greasy when they cook, so I actually don’t drain the mixture. If yours are greasy, though, I recommend you drain mix before tossing in with broth.

Let the flavors cook covered for about 30 minutes.

Toss in tortellini before serving-otherwise they soak up all the broth! Sprinkle top with Parmesan cheese and enjoy!

  1. That sounds delish! I love those Al Fresco chicken sausages. We get them all the time. My fave is the andouille flavor. Johnsonville also makes one that is Chipotle Cheddar or something like that it’s amazing!
