It randomly occurred to me that I actually didn’t tally up my miles for January...so I took a peek at my app and it was 214.7.
I was pretty happy with that UNTIL I remembered that I would like to run 3000 miles in 2014.
Yeah. I knowwww. It’s a LOT. I have to hit an average of 57 miles a week, but for January..I only did that twice. Sooo. I need to step it up a little.
This little (haha) goal isn’t as important to me as my “14 half/full marathons” for 2014. But seeing that I ran almost 2800 miles in 2012, I want to hit 3000 this year. Buuuut. I ran 214 this month..and if you do the math-I need to run 250 miles a month to hit that goal…Aaand I’m 36 miles short for January. Soooo. Hmm. Maybe some strategic planning will be in the works?!? Soon. 😉
Today…I took off from running and did a body pump workout. Owww…you hurt so good…
Tomorrow, I have a meeting after work. This means I will be out of the house from 7am-7pm. I plan to get up at 4:30 to run on my treadmill before work.

Tonight I made the most delicious dinner!! I love balsamic vinegar, and I love bruschetta. So I made bruschetta chicken and a small salad. It really is ridiculously easy to make it…
Ingredients: (makes 4 servings)
-2 chicken breasts
-1 small -medium sized tomato diced (depending On How much you like tomatoes. I realllllly like them)
-2 tbsp fresh basil (or use 1 tsp dried basil)
-2 cloves minced garlic
– 1/4 cup red onion, chopped
-1tsp & 1 tsp olive oil (divided)
-3tbsp& 1 tbsp balsamic vinegar (divided)
-salt & pepper
-Preheat oven to 400
-chop your onions, and then place them with 1 tsp olive oil, 3 tbsp balsamic, s&p (s&p-use your own judgement for taste preferences) in a bowl. Let those flavors sit in the bowl for a bit.
-I take thetwo chicken breasts and cut them in half(horizontally). Then I beat
the crap out of them with my meat tenderizer. You now have 4 pieces of chicken. Place your (now) 4 pieces of chicken in a bowl with the remainder of your olive oil and balsamic vinegar. Let them sit there for a bit.
-chop your tomatoes and mince your garlic. Place them in a bowl with your basil and a little salt and pepper.
-put your chicken on a greased baking sheet and salt and pepper it.
-Next, cook for 25 minutes.
-after your chicken is ready, top each piece with 1/4 of the mixture.
-I like to serve this with a small mixed green salad topped with a little bit of Parmesan cheese and a salad dressing made up of a dash of balsamic vinegar, olive oil, lemon juice and salt/pepper. yum!
